Aldi Meal List {Set 1-2}

Meal #9
Roasted Chicken

Ingredients

1 whole chicken (approximately three pounds)
Salt & pepper (or any other seasoning of your choice)

Wash chicken inside & out (removing anything inside) Sprinkle seasoning of your choice on the chicken. Next put three balls of aluminum foil in the bottom of the slow cooker (this creates a rack so the chicken doesn’t soak in its own juices) Place the chicken in, breast side down, and cook on low for six to eight hours.

Rice

Ingredients

1 cup long grain rice
1 can of chicken broth
1 tablespoon of butter

Combine all of the ingredients and bring the rice to a boil. Turn heat down to low and let the rice simmer for twenty minutes. Allow the rice to set for five minutes before serving.

Serve chicken with the rice & corn.

Meal #10
“Doritos” Casserole

Ingredients

Bag of cheesy tortilla chips (I prefer the Fit & Active variety)
3-4 cups cooked ground turkey
1 can cream of mushroom soup
1 can cream of chicken soup
1 can diced tomatoes
2 cups shredded cheddar or taco cheese

Layer a 9×13 greased pan with the following. Layer of crushed lightly chips, layer of chopped meat, another layer of chips, a layer of cheese, a layer of the soups and tomatoes mixed together (heat them lightly), and then top finally with a cup of chips and another cup of cheese. Bake the casserole at 350 for 25-30 minutes

Serve with chips & salsa.

Meal #11 – Brunch Day
French Toast

Ingredients

1 loaf of white bread
6 eggs
¼ cup milk
1 teaspoon vanilla extract
2 tablespoons sugar
2 teaspoons of cinnamon
¼ cup of butter
*Aldi’s does not sell cinnamon so you can feel free to omit this ingredient or buy the cinnamon elsewhere.

Beat together the eggs, milk, vanilla extract, sugar, & cinnamon. Melt a little butter in a nonstick skillet on a medium heat. Dip bread in the egg mixture (on both sides) and drop the bread into the skillet. Cook until golden brown on each side.

Serve with warmed maple syrup, orange juice, & coffee.

Money-Saving Tips for This Meal:
Substitute the fresh orange juice with the frozen concentrate variety. The taste may not be as good, but the cost is much less.

Mix a little of your vanilla extract & cinnamon into your maple syrup, before heating, for an additional bit of flavor.

Freeze the leftover French toast for a quick breakfast for the kids. Freeze individual servings or place in a large freezer bag with wax paper separating between the layers of French toast.

This meal is one of the least expensive. The price listed in the price breakdown includes the basics (sugar, butter, milk, & eggs) which you usually already have on hand in your house.

Use stale bread to make the French Toast so that your bread does not go to waste.

Meal #12 – Mom’s Night Off: Grilling Out
Everyone needs a night off from cooking and you are no exception. This meal requires very little cooking and can easily be prepared your husband.

Heat grill and grill cheesy brats until they are heated all of the way through. Serve brats with macaroni & baby carrots. RELAX!

Money-Saving Tips for This Meal:
Be sure to save that extra hot do
g bun for the next time that you make your breadcrumbs. Hot dog buns & hamburger buns make great breadcrumbs to be used in your dishes.

This “mom’s night off” is much cheaper than ordering a pizza or getting take-out. Hot dogs & sausage (both sold at Aldi’s) can also be another option for meat on your night off.

If you are a big fan of the Kraft macaroni & cheese, I think you will be surprised how delicious this macaroni is even compared to the more expensive blue box.

Meal #13
Chicken and Rice Dinner

Ingredients

4 boneless, skinless chicken breasts
1 T. of any type of oil you have on hand (olive, vegetable, canola, etc.)
1 can cream of chicken soup
1 ½ cup water
½ t. pepper
2 cups instant rice (uncooked)
2 cups fresh/frozen broccoli

Heat oil in skillet. Add chicken and cook until brown. Remove chicken and add soup, water, paprika, and pepper; stir. Heat to a boil. Stir in rice and broccoli. Top with chicken. Season chicken with paprika and pepper; cover. Cook on low heat for five minutes.

Serve this meal with a tossed salad.

Meal #14 – Slow Cooker Night
Slow Cooked Pork Chops

Ingredients

4 pork chops (approximately 3 pounds)
1 package onion soup mix
1 cup chicken broth

Place pork chops in the slow cooker. In a separate bowl, combine soup mix & chicken broth, stir. Pour over chops. Cook on low heat for six to eight hours.

Serve with mixed vegetables & baked potatoes.

SNACKS

Chocolate Crinkles

Ingredients

1 box devils food cake mix
½ cup vegetable oil
2 eggs
½ cup semisweet chocolate chips
Confectioner’s sugar (to roll cookies in & to sprinkle on top)

Mix ingredients together (except for confectioner’s sugar) Shape the cookies into balls with your hands dusted with the confectioner’s sugar. Roll balls into confectioner’s sugar and place balls on cookie sheet. Bake at 350 for eight to ten minutes.

Heavenly Banana Bread

Ingredients

2 cups all purpose flour
1 t. baking soda
¼ t. salt
½ cup butter
¾ cup brown sugar
2 eggs beaten
1 t. vanilla
½ t. cinnamon
2 1/3 cups mashed overripe bananas (usually is about four bananas)

Preheat oven to 350. In a large bowl combine flour, baking soda, and salt. In a separate bowl cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. Bake 60-65 minutes. Allow bread to cool ten minutes in pan and then turn onto wire rack.
